Quinoa Cauliflower Soup

This recipe was devised by Ruth Alexander. She described the recipes to me and it sounded so good that I had to try it. Here is Ruth's recipe

Ingredients

  • ½cup cooked quinoa
  • 2 Cups cauliflower heads
  • ¼ cup sliced onion
  • ¼ cup cashews
  • ¼ cup sliced almonds
  • 2 tblsp. olive oil
  • salt to taste
  • ¼tsp. ground black pepper
  • A few sprigs of parsley for garnish

Method

  • Cook quinoa according to directions for basic quinoa
  • Cut/slice vegetables. Ensure that the heads of cauliflower are washed under running water
  • Heat oil and saute onion. When soft add cauliflower. Lower heat & cook for about 8 minutes
  • Add the rest of the ingredients, (except parsley) and saute for 2 minutes
  • Take half of mix & pulse in blender until liquid. Now add this to the rest of the pot
  • Blend together. The mix of the whole pieces and the soup texture is interesting
  • Garnish with Parsley. Serve with slices of warm French Bread
