Parsnips Fries

I had never used Parsnips until I recently found a recipe for it in a women's magazine. Parsnips was described as being a cousin of the carrot but often ignored in the produce department.

It is said to be low in calories, yet tastes nutty & sweet. The recipe was for parsnips fries. It looked like fries made from potatoes. I decided to try it and was very happy with the results. I will now be using Parsnips regularly. Do try the recipe.



Ingredients

  • 2 pounds of parsnips
  • 3 tablespoons olive oil
  • ½ teaspoon chili powder or to taste
  • ½ teaspoon sea salt

Method

  • Wash parsnips
  • Peel and cut parsnips into sticks
  • Toss with olive oil, salt and chili powder
  • Bake at 350° for 20-30minutes
  • Turn halfway through cooking time
