Potato Curry Cooked in Microwave

Easy, Delicious, Potato Curry

When you are not quite in the mood to cook, but still want something tasty on your plate, this microwaved potato curry may be just the thing. I cooked it a few nights ago as an addition to dhal and rice that I already had.

This morning I cooked it again to make a tasty lunch. Cooking time will depend on your microwave power level. It should cook between 10-12½ minutes. It is advisable to check it midway and just turn the contents over so it cooks evenly. This curry is not just quick to make but is delicious as well.

Here is the recipe.


  1. 2 medium sized potatoes
  2. ¼ cup sliced onions
  3. 2 tablespoons canola oil
  4. ½ cup water
  5. 1 tsp. crushed ginger
  6. 1 tsp. ground cumin
  7. ½ tsp. fenugreek powder, (optional, you may use coriander powder instead)
  8. ¼ tsp. turmeric powder
  9. ¼ tsp. chili powder
  10. 1 tsp. salt or to taste
  11. Coriander or curry leaves for garnish, (optional)


  1. Peel potatoes and cut into small cubes. Rinse and add to a microwave-proof dish
  2. Rinse and crush ginger. Wash and chop onion
  3. Add these and the rest of the dry ingredients to the potatoes
  4. Add oil and water, mix, then place in microwave, cover dish and cook on high setting for 10 minutes
  5. Midway through, mix the contents and return to microwave
  6. At the end of 10 minutes, remove from microwave and test the softness of the potatoes. If it is not quite soft, return to the microwave for another 2½ minutes
  7. It should be cooked by 12½ minutes. Garnish with coriander leaves or curry leaves
  8. Serve with rice or bread

This potato curry can be eaten with bread, rice or roti. A squeeze of lemon or lime adds a nice flavor. An addition of a salad will make a good meal.
