Lentils are nutritious and very filling, yet low in calories and a good source of protein and fiber. The addition of carrots makes this a wholesome meal.Carrots are rich in beta-carotene, which is converted into vitamin A in the liver. Vitamin A is transformed in the retina, to rhodopsin, a purple pigment necessary for night vision.

The soup is easy to make. If you boil your own lentils, one cup will yield 3 cups when boiled. You will need 1 cup of lentils for this recipe. It will serve about 4 people. You can either make a bigger batch and serve more people or freeze half of it. You may also use the lentils for stuffing like, The Stuffed Portobello Mushrooms.
You could also just freeze the lentils to make a fresh batch of soup another time or you may also use the lentils in a salad or combine it with rice or quinoa. For a slight variation on lentil soup, here is a link to, A Lentil Recipe that is made without the carrots.
You may serve the soup with a side salad or bread.
