Roasted Vegetables

Lentils are nutritious and very filling, yet low in calories and a good source of protein and fiber. The addition of carrots makes this a wholesome meal.Carrots are rich in beta-carotene, which is converted into vitamin A in the liver. This dish is vegan and gluten free. It makes a good meal for anyone watching their weight as well.

Here is the recipe.



Ingredients

  1. 1 ½ cups boiled brown lentils
  2. 4 tablespoons canola oil
  3. 1 carrot, sliced in rings
  4. 2 roma tomatoes
  5. ½cup onion, cubed
  6. 2 teaspoons ground garlic
  7. ½tsp ground ginger
  8. ½tsp chili powder
  9. 1 ½tsp coriander powder
  10. ½ tsp cumin powder
  11. 2 green chilies
  12. 1 tsp. salt or to taste
  13. 1 tsp freshly ground pepper & a few whole peppercorns
  14. 3-4 cups water, use the water that was used to boil the lentils
  15. A few sprigs of cilantro for garnish.

Method

  1. Pick lentils to remove any debris, then wash
  2. Boil lentils in about 6-8 cups water or cook in pressure cooker
  3. Wash tomatoes and onions, slice/cube
  4. When the lentils are soft, strain the lentils and save the water
  5. Heat oil, then add onions, peppercorns ginger & garlic. Mix well
  6. Add sliced tomato, carrots, lentils and rest of spices, blend all ingredients
  7. Add about 3-4 cups of water that was used to boil the lentils
  8. Add salt. Allow mix to cook, lower heat
  9. Stir ocassionaly. The soup will be ready when the mix appears to be well blended, about 15 minutes
  10. Add more water if soup appears too thick. Add crushed black pepper and stir
  11. Serve with bread and salad or any accompaniment that you prefer

About the Soup

The soup is easy to make. If you boil your own lentils, one cup will yield 3 cups when boiled. You will need 1 cup of lentils for this recipe. It will serve about 4 people. You can either make a bigger batch and serve more people or freeze half of it. You may also use the lentils for stuffing like, The Stuffed Portobello Mushrooms.

You could also just freeze the lentils to make a fresh batch of soup another time or you may also use the lentils in a salad or combine it with rice or quinoa. For a slight variation on lentil soup, here is a link to, A Lentil Recipe that is made without the carrots.

You may serve the soup with a side salad or bread.
