Washed Leek Stalk
I adapted this recipe from one that I had seen on the Martha Stewart Show. Prior to this recipe, I just used leeks in stews, and that too, was not very often. It is now a popular dish in my home. It is very easy to make yet very delicious and nutritious.
When you buy leeks cut off the bottom roots with a short piece of the stem included. If you plant the roots, they will grow and you should get a new crop of leeks. The fronds overlap and may have dirt lodged between them. Wash carefully under running water to get rid of dirt and other debris that may stick to the fronds.
Cut off any stale looking leaves. After washing under running water, soak stems in a dish of water and check fronds for any sand residue. When the water is clear it is safe to use the leeks. Slice them in 2 inch pieces.
This recipe can also be used to stir fry shallots.
