I love the vegetable, eggplant, aubergine, baingan or brinjal as it is also known. There are so many ways to cook this vegetable that it will take a book to list all the recipes.
This segment describes a very quick, healthful & easy way to “fry ” eggplants. It is done in the microwave using a very small amount of oil. It still tastes superb and the best part is you don't have to be concerned with how fattening it is. Fried the usual way, coated in batter it is often oily and rich.
This eggplant may be eaten as a side dish or added to sandwiches and salads.
