Faux Fried Eggplant

I love the vegetable, eggplant, aubergine, baingan or brinjal as it is also known. There are so many ways to cook this vegetable that it will take a small book to list all the recipes.

This segment describes a very quick, healthful & easy way to “fry ” eggplants. It is done in the microwave using a very small amount of oil. It still tastes superb and the best part is you don't have to be concerned with how fattening it is. Fried the usual way, coated in batter it is often oily and rich.

This eggplant may be eaten as a side dish or added to sandwiches and salads.

Ingredients

  • 6 slices of eggplant
  • 1 tblsp. canola oil
  • salt to taste
  • 1 teaspoons garlic
  • 1 teaspoon red chili flakes

Method

  • Wash eggplant and cut 6 ¼ inch slices
  • Add all the ingredients including eggplant into a gallon size zip lock bag and shake to season the sliced eggplants
  • When it appears to be evenly seasoned, arrange eggplants in microwave tray and set for 4-6 minutes on high. Check after 4 minutes and adjust time
  • The eggplants should feel soft and have a limp appearance. Adjust salt if necessary and serve
  • You may also cook this on a non-stick grill on the high setting. Just add 2 teaspoons of oil on the grill
