Roasted Cauliflower

This is a again a super quick, yet delicious side dish. It can be served as a snack as well. Eat them with no guilt as they contain very little oil.

Ingredients

  • 1 head cauliflower(about ½pound)
  • 2 tblsp. Olive oil
  • ¼ tsp. pepper
  • salt to taste
  • 1-2 tsp. crushed garlic

Method

  • Pre-heat oven to 425° & drizzle a 15 x 10 inch flat pan with 1 tablespoon Olive oil
  • Separate florets, remove blemishes & soak cauliflower in water. Gently rub florets to remove any hidden debris. Remove water. Rinse again & cut cauliflower into ¼ inch thick pieces
  • Arrange in prepared pan in a single layer. Drizzle cauliflower with garlic, salt & pepper, & remaining oil
  • Bake at 425° for 25-30 min.or until golden brown at edges
  • Adjust salt and serves
