My son, Shyam, first introduced me to this extremely, healthful & tasty dish. He had eaten it at the Black Bottle Gastro-Tavern in Seattle & then made it at home with good results. I have since eaten it at this restaurant & made it myself several times. The restaurant lists it as Blasted Broccoli. It is cooked in a very hot oven, and the tips of the broccoli are often slightly charred with a smoky aroma.
Roasted Broccoli can be eaten as a side dish just by itself or as an accompaniment to pasta or other food. When buying broccoli, look for dark green heads and short stems. Wash well and use your fingers to rub the heads to remove any hidden debris. Peel off the outer edges of the stem.
