Delicious Roasted Pumpkin

Pumpkin can be made in a variety of ways, from savory curries, to sweet dishes like pumpkin pie. Pumpkins are very low in calories and an excellent source of fiber and anti-oxidants. Here is a link for a full description on The Benefits of Pumpkin.

The recipe that follows is quick and easy and makes an excellent accompaniment to many dishes including red quinoa.

Here is the recipe.



Ingredients

  1. Portions of cut pumpkin to fit a 9" baking pan, about 1½ pounds
  2. 3 tablespoons olive oil
  3. Sprinkling of cinnamon
  4. Crushed black pepper
  5. 1 tsp. salt or to taste

Method

  1. Wash the outside and rinse the chunk of pumpkin
  2. Chop pumpkin into approximately 4"x2" pieces. Layer in baking dish
  3. Pour olive oil over pumpkin pieces. If some pieces have less oil, just pick up pieces and dab on oil from bottom of baking dish
  4. Sprinkle with salt and black pepper
  5. Cover with aluminum foil, to prevent pumpkin from drying out
  6. Pre-heat oven to 400°F/200°C. Add pumpkin when oven is ready
  7. After 30 minutes test to check if pumpkin is soft. (Use a cloth to touch baking tray and insert a knife to check doneness
  8. If pumpkin is soft, remove foil and let it cook for another 10 minutes. If pumpkin is still firm, cook until it feels soft
  9. Serve roasted pumpkin with salt, black pepper and cinnamon powder on the side, to cater to individual tastes

This method of cooking pumpkin is very nutritious. There is minimal oil used. It makes a nice accompaniment to many dishes. On a recent occasion I served roasted pumpkin with Edamame and Red Quinoa with almonds. It made a wholesome, highly nutritious dinner.
