Stuffed, microwave baked, acorn squash
There are numerous ways to cook acorn squash, including baking, making it into soup & adding to salads, to name just a few. Acorn squash is low in calories and loaded with nutrients such as iron, calcium, vitamin A & C, fiber, carbohydrates, magnesium, fiber, protein, and is a fat free food with no cholesterol.
A quick and easy way to eat this vegetable is simply washing it, slicing in halves, microwaving and eating after adding some condiments for flavor. I have a quick & easy recipe that is made in the microwave. It is stuffed with other vegetables that blend with the squash, making a delicious meal.
My recipe comes with Cheddar Cheese, This is entirely optional. You can either choose to leave out the cheese or add any other cheese that you prefer. Vegans can just leave out the butter and cheese. You may also choose to bake the squash in a regular oven. Cooked in a Microwave oven means that. you can have a delicous meal in 20 minutes. See recipe below.
