Stuffed, microwave baked, acorn squash

There are numerous ways to cook acorn squash, including baking, making it into soup & adding to salads, to name just a few. Acorn squash is low in calories and loaded with nutrients such as iron, calcium, vitamin A & C, fiber, carbohydrates, magnesium, fiber, protein, and is a fat free food with no cholesterol.

A quick and easy way to eat this vegetable is simply washing it, slicing in halves, microwaving and eating after adding some condiments for flavor. I have a quick & easy recipe that is made in the microwave. It is stuffed with other vegetables that blend with the squash, making a delicious meal.

My recipe comes with Cheddar Cheese, This is entirely optional. You can either choose to leave out the cheese or add any other cheese that you prefer. Vegans can just leave out the butter and cheese. You may also choose to bake the squash in a regular oven. Cooked in a Microwave oven means that. you can have a delicous meal in 20 minutes. See recipe below.


Ingredients

  • 1 medium size acorn squash
  • ½ tblsp.butter or ½ tblsp.olive oil to smear inside the split acorn
  • salt & pepper to taste

Filling

  • ½ cup chopped peppers
  • ¼ cup chopped red onion
  • ½ tsp. crushed garlic
  • 2 tablespoons olive oil
  • 3 button mushrooms, chopped
  • 2 slices tomato
  • 2 tablespoons cheddar cheese, or whatever cheese you prefer
  • salt to taste

Method

  • Wash all vegetables, the outside of the acorn squash as well
  • Cut the squash into 2 equal halves
  • Cover with clingwrap and microwave 5-8 minutes
  • Please note: this is an approximate time. It depends on the size of the squash and the power of your microwave. Cook until the flesh of squash is soft
  • Remove from microwave. Sprinkle salt & pepper
  • Apply butter or olive oil to the insides of the squash. Keep aside

Preparing Filling

  • Heat olive oil in a small pot on high temperature
  • Stir fry the ingredients for the filling including garlic, 2-3 minutes
  • Add salt, then remove from stove
  • Add the stir fried vegetables into the hollow of the squash
  • Add tomato slices to each squash. Top with cheese
  • Cook in microwave for 4 minutes or until cheese melts
  • Serve alongside a green salad
